This wine is from vines at the ends of rows and some of the youngest plantations, which are at the ideal stage for creating base wines
Vinification
Direct pressing after hand harvesting.
Partial alcoholic fermentation to allow a natural refermentation in bottle.
Each year’s juice is added to a solera started in 2010, which guides this cuvée.
Ageing
24 months minimum ageing before disgorgement.
