Grape variety: Chenin.
Created in 2003, this wine is an ode to slowness, to patience (of angels…). It takes all the time necessary to reveal its freshness, its generosity and its length on the palate.

60 year old vines.
Terroir
Tuffeau limestone hillsides.
Vinification
Direct pressing of whole bunches after hand picking. Only the first-press juice is transferred to barrel and moved down into our cellars in the tuffeau. Fermentation without added sulphur follows the rhythm of the seasons.
Ageing
15 months in large oak vats and 500 litre barrels, then 6 months rest in stainless steel vats before bottling.
